This is a recipe from my young adult years that is a nice seasonal sweet.
Pumpkin Bread
3 C sugar
1 C salad oil
4 eggs, beaten
1 16 oz can pumpkin
3 1/2 C flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp ground nutmeg
1 tsp ground allspice
1 tsp ground cinnamon
1/2 tsp ground cloves
2/3 C water
Preheat oven to 350.
Grease and flour two 9 X 5 loaf pans.
Cream sugar and oil. Add eggs and pumpkin, mixing well. Sift together dry ingredients. Beat in dry ingredients alternately with water.
Equally distribute batter into the two pans.
Bake for approximately 1 1/2 hours or til done. Let stand for ten minutes before removing from pan. Enjoy.
